Anyone wanting any really good salmon and halibut recipes, let me know and I'll fire them off to you.. while in Kodiak, I tried Halibut Chowder and Halibut Lasagna.. both were excellent.. and I've got a fire roasted roma and pepper salsa that's out of this world..

Halibut Lasagna
10tbs butter or margarine, divided
1 ½ lbs Halibut, cut into 1” cubes
3 garlic cloves, minced
3/4 tsp dried thyme
2/3 cup flour
3/4 tsp salt
2- 14oz cans chicken broth or 3 cups stock
1 pint half and half (I use fat free)
8oz Lasagna noodles, cooked
3 cups blended mozzarella, provolone, and cheddar cheese
pepper, paprika, parsley to taste
cayenne pepper, to your taste…
In a large skillet over medium heat, melt 2tbs butter. Add Halibut, garlic and thyme. Cook until fish begins to flake, approx. 6-8 minutes. Do not overcook. Remove and flake, set aside. Add the remaining butter to the skillet and melt. Stir in flour and salt until smooth. Cook and stir until golden brown being careful not to overcook. Gradually whisk in broth and then half and half. Bring to boil, cook and stir for two minutes or until thickened. Add pepper to taste. In a greased 13X9 pan, layer noodles, halibut, sauce and cheese. Repeat layers. Sprinkle lightly with paprika and parsley. Cover and bake at 350 degrees for 30 minutes. Uncover, bake 20 minutes longer or until bubbly. Remove from oven. Let stand 15 minutes before serving. 8 servings…
Salmon/Feta
¾ cup Feta
3 oz Cream Cheese
2 chopped scallions
½ cup chopped fresh spinach
2 Salmon filets
Mix together first 4 ingredients. Oil your pan. Spread mixture on first filet. Place second filet on top. Drizzle with olive oil. Bake at 350 for 10-15 minutes if thin filets, 20-40 minutes if thick…
Salmon/Pecan
2 cups Panko chips
¼ cup mayonnaise
¼ cup garlic powder
½ cup crushed pecans (or walnuts)…
Mix together and mold around filets (great with Halibut too)… Bake 15 minutes or until golden brown 350-375 degrees…

Halibut Chowder
(cut recipe in half for 4 servings)
4 cans cream of potato soup
2 cans cream of mushroom soup
1 can corn *note: when cutting recipe, use full amount of corn and carrots.
1 can carrots
1 lb cream cheese
3 cups milk (I use 2% or less)
1/4 can of water for each can of soup used
1 medium onion, diced
1 clove garlic, minced
5 cups cubed Halibut
5 tbs oil
salt and pepper to taste
cayenne pepper
Saute onion and garlic in oil, then add cubed Halibut and cook... set aside. Heat cream cheese and milk until cheese melts using whisk to rid the lumps. Add soups, veggies, and water. Heat to light boil, stirring often till it heats through. Add salt, pepper, and cayenne to taste. Add Halibut last and heat through.
Crunchy Halibut
5 pieces of Halibut
Combine the following to marinate the Halibut:
4 tbs olive oil 2 tbs lemon juice 1/2 tsp salt 1/8 tsp pepper
1/8 tsp dry mustard 1/4 tsp marjoram or rosemary 1/4 tsp garlic powder
Mix together the following:
2/3 can (small) fried onion
3 tbs parmesan cheese
Marinate the filets for 30 minutes, turn over. Place filets in baking pan and put onion/cheese mix on top of them. Bake at 450 for 20 minutes or until done, watch to keep from burning.

JudyFish.. I'll send you a CD with all the recipes, you organize the recipe book and sale, and IFISH will be happy I'm sure.. everyone could send their favorite recipes in and get published!... I've got a program on the computer that would add fun pic's to the recipes also..

Ocean Blue and I have been discussing the hows and whens of this for a while now. It's been brought up several times... we have just now started to really work on it, and bring it to life!
Trying to decide if we want them posted on ifish, or PM'd to us, so we can surprise you all at once.

Jennie, if you do decide to do the recipe book, I'd buy about 5 copies too... and what I'd do is send you or whomever is doing the compilation the CD of recipes, then you guys could pick the ones you liked to put in the book.. we put one together at work and they all sold out fast..
