That is very close to the receipt that I got from John barlycorns (McMinnimums Pub), but had not cut down the indistrial measurements yet.

Barlycorn's are my favorite fish n chips in town. :smile: This sorta similar, but I have not been there in a while so...

For more crunchy results, you can dredge them in breadcrumbs before adding to the fryer.

I tried this recipe last night for NEWYEARS . We deepfried Sturgeon, Salmon, and Steelhead. It turned out awesome!!!!! could use a skosh more salt

I revisited this recipe and decided that it needed a couple more tweaks.
1) Added 6oz more beer to lighten it up a tad.
2) Spice up some plain bread crumbs with cayenne and black pepper--dredge battered fish in this before adding to oil.
Add some sea or kosher salt, to taste, to finished fish.
To keep batches warm, I keep the oven on 200F with a broiler pan waiting to have more fish added.
Store leftover fish in paper bags in the fridge to keep them crisp. Also, line a plate with paper bags for the bags 'o fish to rest on as to not get your fridge shelf oily.

Excellent recipe Striper Club! I had been looking for a good beer batter recipe to use for my Kokanee fillets and now I have one. I used Black Butte Porter beer and like in your revision, thinned the batter a bit, which I like.I cooked them in my "Fry Daddy" which cooks right at 350 degrees. Some tater tots and salad made for a great meal! :cheers:

If you soak your fish in salt water before battering up, it is really good!

TTT -- I still have not tried the salt water yet... Does it make much of a difference?
