Several medium potatoes halved. Celery stalk quartered. Two heads garlic whole. 4-6 ears corn shucked and halved. 6-12 crab whole. salmon halibut or both 3 inch chunks.three medium onions halved. 1pt to 1qt cider vinegar. two to five gallons sea water depending on pot size. Two large handfulls pickling spice. One small handfull small hot chilies. Bring spices vinegar chilies and water to a rolling boil. Add all ingredients except fish starting with veggies.Put crab on top and cover return to boil five min. add fish continue to boil 10 min. remove from heat pour off liquid. Serve with loaves of bread and cold beverage of choice. Tear bread cover with butter (not margerine)squeze garlic out of cloves on bread. devour with seafood veggies and beverage.Enjoy life and wonder what poor people are doing.

This is very similar to Crawfish Boil you can get most anywhere in Louisiana. The corn turns red if you use enough pepper and paprika.

While working in Nachitoches, La. I frequented a place called Norma's crawfish hole. After several nights I had to watch the cook do his thing so I could learn more. For Crawfish Boil he used new red potatoes, crawfish (30 pounds) instead of crab and quarter 1/2 dozen large lemons. They also had a 48 Qt cooler full of a mixture of salt, paprika, crushed red pepper and other spices. Using a dog food scoop they added about 3 of these full of this spice mixture to each pot of about 7 gallons of water.

That stuff was *HOT* as hell but oh so good.

what a guy! first he takes me out in his boat (i just gotta get me one of those edwings) shows me his hot spots, gives me good tips and tells great stories, then he makes sure my cooler is full of fish and crab. then he stuffs me so full of this boil that i almost have to throw up so i can eat more, just like a shark! i cnt wait to go fishing with jon again. .... maybe i should keep this quiet so there is a shorter line to get back on his boat??? i hope everyone gets the great experience of fishing AND eating with jon! i sure hope i get the opportunity to lose my tuna virginity with him. ha ha ha
