Have heard people throwing back keeper sized "yellow bellied" sturgeon. What does this mean and how does it affect it's culinary appeal??? Thanks for any replies.

If you want to eat a sturg get them in the estuary when it is open. There is a definate diff in the quality of meat between ocean fresh and upriver fish. I dont know if it means they are bad but do you really want to chance it?

So, is a yellow belly a characteristic of a up-river fish, or one that has spent considerable time above the estuary.

soak them in fresh water for a couple of days rinsing often that is if they arent showing definate signs of deteriation... :grin: :grin: :grin:
