On the East Cape of Baja is a place called Rancho Leo Nero (www.rancholeonero.com)that is a fishing oriented resort that has a variety of boats and could accomodate inshore action for a wide variety.
I recommend the place.

Shut up and fish,
Two things: September is 'Hurricane season' in Southern Baja. Not that I'm suggesting you not go, just be prepared that you might have some 'weather affected' days. Also, we've taken our parents (76 and 77 y/o) the last two years to Cabo with us and they have the same type of concerns you've expressed. They usually fish 3-4 times the 8 days we're there ( Barb and I fish everyday) and we just tell our Pangero that we want to fish "in shore" those days. We catch lots of Sierra, football yellowfin, small dorado, and bottom fish (5-15#). They can handle those fish with relative ease and just love it.
A panga would definately be your boat of choice though. Just let the Pangero know what you want to target; they're great. Just don't pay any attention to all the Marlin, Bull Dorado, Big yellowfin, and Wahoo that you will see on the docks from the 'outside'. Late September, October, and November is the magic time in the lower Baja. Go, you'll have a great time and take a cooler to bring your quality catch home to eat during the winter.

I too can vouch for the outstanding fishing and hospitality at Rancho Leonero....If you decide to go there let me know, I kept a log of some of the better skippers/guides.
I'll be down there the 2nd week in July if you want a report!

Cabo has a wide range of choices from Marlin on down. Dorado and Tuna are usually abundant down there. You also have your choice of boat sizes, all dependant on price. Some great fishing villages up north of San Jose Del Cabo also.
I have a time share for rent if your interested, let me know wwhen and where and I will check for availability.

I'm headed for Cabo in June. How do I go about renting (or chartering) a panga?

I reccomend Loreto. Also on the east side of the baja. Going to be there at the end of the month, wahoo. Nice little town, national oceanic park, good food, and great fishing.
