Commercially caught Sturgeon: What market does it go to? Overseas? How much do they get for the Sturgeon per pound? I never see Sturgeon on the menu at any restaurant here in the NW, or at the grocery store fish counters either.
If it is sold outside of our own marketplace, then nobody gains anything except the gillnetter, and the fish wholesaler who resells it to the end users.
Just wondering. Anyone know the answers to this?

I have seen it for sale at Tonys in OC for about 13.00 per pound fresh and 15.00 per pond smoked. And at Pacific in Rockaway for about the same.
Have seen it on several restaraunt menus as well.
Havent ever bought any as I would much rather catch my own...........and a lot of other reasons.

Gonna go try to get some tommorrow as a matter of fact!!!

I have seen it on menus at seafood resturants from the west coast to the east coast. It is usually on the better resturants. I have not seen it in food stores, but I have not looked for it either.

I have seen it in seattle at that market place. It was like $6+ dollars a pound.

Salty's, Stanford's, McCormick's and Schmidts, Jakes, Newport Bay etc.
I rarely order it there though.

Man...I'd rather buy it in steaks than catch it. Those black eyed creatures look like 'da devole' on da end of the line.

Sturgeon is on many restaurant menus in season and some out. It is a treat for many of my out of town guests. They always are surprised by the flavor and texture. I think this is one of the benefits that should be promoted in this city. Many of them still ask me for more either fresh (frozen) or smoked.
