View Full Version : HELP !! SMOKING ADVISE NEEDED ASAP

I have been brining my fish now for about 8 hours ... I know you should now rinse the fish and let air dry for about an hour, then smoke it..... I just found out that my wife has made plans for us this evening, therefore, I will not be able to smoke my fish now until morning...

What should I do about my fish??? HELP !!!

just leave it brine and in fridge or outside plenty cold and finish in morning it will be fine :smile:

I'd put it in the fridge with wax paper then soak it out in the morning maybe soak with fresh water for a couple of hours should be OK

sturgeon slayer is right just leave it in the brine and rinse it in the morning when you are ready to go!

First of all----Don't worry about it! :smile: Don't let it get too salty, by leaving it in the brine. Cook it HOT! Enjoy!!!!!!!

First of all..... I knew I could count on Ifisher's to help me out..

Strug Slayer.. I will leave it in the brine till mornining (early morning) then smoke as usual.

Ive soaked my fish in brine for more than 24 hrs on occasion with no harm. I agree that it is best to keep the solution cold-- fridge or outside tonite( if you are free of critters)!

I would suggest that you NOT soak it in fresh water. Instead right after taking it out of the brine, rinse it off quickly and immediately paper towel the pieces dry.

The whole purpose of the brining step is to replace water with salt and sugar. You dont want to re-introduce water into the cells of the flesh.

Let the pieces air dry until a pellicle forms, and then off to the smoker.

Do Not Put it outside where critters can get at it!! I put mine outside in 2 big SSteel bowls to brine for the nite thinking it would be best and easier than putting in the fridge, and then next morning.................I had 2 bowls upside down!!! And brine and a few chunks left on the deck!!!!!!!!!!!!! The raccoons or possumms got me!!! It really ****** me as I had promised fish for a special occassion. Egg On Face!!! Then I had to clean up the mess... And it was covered with newspaper and cardboard on top of that.. Keep in fridge and cover w/ptowels or wax paper.. Good luck and drink a beer with smoked fish watching the Rose Bowl!!!! Chillyone.........
