View Full Version : Freezing salmon eggs question

After a bit of luck out at Frenchmen's Bar the last two days, I have 3 pints of eggs curing as I type. I was planning on freezing them in pint mason jars. I have heard that you can just drop a small piece of burning paper in the jar prior to sealing it to eliminate the oxygen left in the jar. I can do that.

Here is my question.

Has anyone ever used the sealing attachment for mason jars on your food saver? Does it generate a sufficient seal, or should a person do the burning paper thing as well? Any feedback?

I used to use the paper method before the vacuum attachment, but the seal is much better with the vac, machine and you donot end up with smoke in the jar. Make sure you use freezer jars though if you also can your catch. Jars that are not freezer labeled will break in the canning process after they have been in the freezer :wink: Also , if you have trouble getting a lid to seal, take saran wrap and bunch up under attachment around jar and it will help to start vacuum on those stubborn jars. :grin:

Even better is to freeze the eggs in the jar for a day or so then pour the juice you drain off the eggs after curing back over the top of the of the eggs in the Jar. Liquid sealed, it will never freezer burn Period. If you want to then you can seal the lid on too if you want total overkill. I have saved eggs for 5 plus year this way with no freezer burn.

Have read your step by step process on IFISH several times, :wink: always lookin for that GOLDEN EGG. I like to put up my eggs a little rubbery and am thinking of trying your advice on adding the brine to my already frozen eggs. What effect may this have when unthawing? Will redrying need to be performed? Will I end up with a wetter egg? I am confident it will not harm my eggs, just lookin for some extra info. :wink:
