Tried his recipie this last week and it was tops. One of the best I have used. think it has something to do with letting the clams rest for 20 min. Reprinted here for all others.... Save this:
Here is our favorite way to cook razor clams.
1. Dredge clams in flour.
2. Dip clams in beaten egg.
3. Dredge in cracker crumbs or a mixture of cracker crumbs and Panko breading. We also like to grate some Asiago cheese into the mixture as well. It really adds a nice taste.
4. Let the breaded clams rest for about 10-15 minutes.
5. Fry in hot peanut oil for 1-2 minutes until golden brown. Drain on paper towels and season immediately with salt and pepper.
6. Serve with a wedge of lemon.
Enjoy!!!!
Note: could not get with the peanut oil, I used butter, the real stuff. Guess you just change some old habbits.
