So, are fish sensitive to the signal a fishfinder puts out? Does it drive them out from under the boat when still-fishing? I would like to hear some opinions on this.

Yes, I think some fish are sensitive enough to hear the noise, heck I can hear it when the Transducer is out of the water. I think depth and noises attenuation have a lot to do with how your particular sonar affects fish under or around your boat.
am I going to stop using it? no way

I don't know if it makes a difference but I always turn mine off when I am on the anchor. I don't see any point in leaving it on when I am not moving or using it to locate fish or determine depth.
I guess its one of those litle things like washing hands, using gloves, etc.
