It depends on the brine recipe you use. I use a brown sugar based and always brine overnite. Works great!

I also use brown sugar and teriyaki sauce instead of soy. I also cut it with apple juice not water. I like mine sweet. Brine 6-9hrs. Before I start to smoke I’ll sprinkle coarse black pepper on the filets. Smoke it about 9-12hrs.

Is the little chief receipe a dry brine or wet brine. I do mine different depending on the brine. Give me a call and I will share my secret :wink:

Shame on you for smoking Springers!! That's what the fish you catch after June are for!!

If you ask me...springer meat is too oily for smokin', and too good to smoke!!

The only part of a Springer that should be smoked is the Bellies and Colar's. The rest is meant for the BBQ. :wink: Good Job Andy.

2 cups brown sugar
1/4 non iodized salt
1 cup lawry's seasoning
2 TBP garlic juice
2 Quarts warm water

brine over night, air dry or dry in the frig for 1-2 hours. smoke 7-9 hours in a little chief or equiv.

I will be trying teryaki or soy with this, but as is this is a great recipe and simple.

quick edit: yes I am smoking the tail, belly and colar

I am doing both trout and springers with it and the results are awesome. YUM! graemlins/hearton.gif

I feel that one night of brining is a little light. I always keep it in for 24 hours minimum. If you are doing the basic recipie for the little chief smoker use less salt than it calls for. This will allow you to still get that fresh springer taste we all love. (I always smoke some of the springers I catch. I love to have an oily fish to smoke)

Hi guys, thanks for the replys. First of all I used the wet brine and let it brine for about 15 hrs. It takes that long to get all of it soaked to me. I converted to using the gallon size zip lock bags for the spill proof method. I read that a while back and it works great. The problem was I started brining at 11:00 pm. I It's now 7:00 and just started up the smoker. Looks like it will be done soon enough though. Lately I also started to put red pepper flakes for a little spice. Once again not to burn your taste buds though.

I didn't smoke all of it. I have some for the BBQ, and dare I say it too? Freezer. Just a little bit anyway.

Steve, You got me started on that sugar kick a while back. Stop it!!! :grin: I like a sweet smoke as well. It never gets over powering. A great touch also.

fishonksm, I'll have to try the teriyaki and apple juice somtime, Sounds good.

firedog, We're opposites. I like to BBQ the belly's and collars. My favorite pieces too. MMMmmm. They're are the best parts!!! :cool: And thanks too.

Gus Orviston, Where do you get Garlic juice? I think I can try and mince some in. Sounds good too.

Went out with Skipper last night and tagged my first springer. A whopping 18 lb'er. Big thanks to Skipper!! :cheers:

Question to those that smoke.(Fish of course) How many Brine fish and take it out of the brine to smoke the next day? Does it quit curing as you take it out of the brine? Will it get too salty? I am using the little chief recipe if that helps. Or I could stay up till 3:00 am. :whazzup: Not that I mind at times.

Smily should be all smiles now :grin: He got another one today. Not quite as big as the one he got the other night but nice and bright. King Fisher also got his first springer today as well :cheers: . We fished from 5:30 - 2:30 in the Lake Line. We only saw about 9 or 10 others caught. Beautiful day out on the river but very slow :sleep: :sleep: .

A big Thanks to Lipripper!!! :cheers: It was a beautiful day on the river. The catching could be better all around. It was very spotty today. You still were very good to get us into fish when it was that slow.

Congrats to KingFisher for gettin his first Springer!! :grin: I wish I was around to see how happy he got when he got his fish. Hope he got as excited as I did this morning. What a pleasure it was to meet him also.
