Here is a recipe we've been using for a few years for flank steak and I also use it to make the best Jerky I've had:
2/3 cup red wine
2/3 cup soy sauce
1/4 cup brown sugar
4 (or more) cloves garlic
1 tsp thyme
1 tbsp sesame oil
marinate four hours (longer is BETTER)
(We buy flank steak from Costco and put them in freezer bags then freeze in the marinade.)
Remove from marinade and cut into your usual Jerky slices and smoke away!
I smoke it in my Brinkmann water smoker for about 12 hours. Less time in the Little Chiefs
Whatever you are accustomed to for smoking times.
Makes GREAT boat-grub!!!!!
We also take these steaks and put them on the gas grill for about 6 minutes per side and cut diagonally very thin slices for a great main course on the patio/deck in the summer time or all year long. YUM! Mrs. Hoochie is making the marinade now and that's whi I'm thinking of it and posting. Enjoy.
