Rolling the battered pieces in panko before it hits the fryer is a nice way to mix it up.

Let the beer warm to room temp and let it go flat a little.

Another good one is:
2 c flour
1t baking powder
1 egg
1T oil
seasoning (I like Cajun)
1-1.5 dark beers (Porter or winter brews)

Mix, drag fish thru flour, then dip in batter, and fry (I use canola for deep frying). The original recipe called for 1 beer, but I use about 1.33, as I like a thinner batter than some. I season it when I take it out of the oil.

I'm in WA and haven't seen the Pride of the West, but I'm going to be looking harder to find it.

where you at Goldrush?? pretty much any NW grocery store should have PTOW, cause it's the best!! beer or dry batter fish, onion rings, mushrooms, it's ALL good......i get mine at Winco...............:D

Teds in Westport doesn't have it, and I haven't seen it at Freddies in Tumwater either, but I'll keep looking. Haven't tried Tops.

Look for Pride of the West Baking Mixes in the Seafood Department at Fred Meyer, Haggens, Safeway.
It is usually NOT in the baking / frying aisle.

P.S. I'm mixing up my first batch this afternoon with some Sturgeon. :D
