This is the second year I have ordered Pastami made from our elk roast from one of the game meat processors in the Portland area. It is great. I asked them if they had a kit where I could do it myself and they said they had not yet put it together. Has anyone out there tried this themselves or have any suggestions? I'm off to search the Internet next but thought this might be a good place to start.
