got a boatload of crab yesterday and besides giving it away to neighbors etc, im trying to think of a good way to preserve it (ive had marginal results with freezing it)......so I was wondering if anyone has ever canned it? or does it turn to mush or ?? thanks

Freeze in Milk?
It worked great for me, at least for a few months.

A bit late but for next time, you can defiinitely can it. Do a google seach for it from OSU and you should find a white paper on it. It does take away some of the taste but still a good way to keep extra o/h.

We have great results from vacuum sealing and freezing. Freeze the picked meat in a container, then transfer it to a vac bag, seal and toss in freezer. When ready to thaw, puncture bag so that it doesn't suck all the juice out of the meat. Enjoy in crab cakes, on salads, stuffed mushrooms or whatever you normally do with your crab.

My Mom tried for years to find the trick. Her best success came with freezer bags topped of with salt water. It seemed to keep more flavor and now a days you could vacuum seal it.

my buddy's wife followed the recipe from the booklet that came with the pressure cooker and basically ruined a full limit of primo crab..........:passout:
it came out dry, stringy, and bland.
if you wanna freeze crab, take a tupperware container, fill to the top w/crab meat (cram it in there) then fill w/milk. put the lid on & freeze. when you are ready to use it, set it in the sink until thawed, pour the milk off & use normally. DO NOT RINSE!!
this has worked for me & my buddies for years now, it's the ONLY way i'll freeze crab.
