Here is what we were treated to, as kids. I still love this soup! What is your favorite way to use up 20 pounds of turkey? :smile:
Turkey Meatball Soup
1 cup ground cooked turkey
1/2 cup fresh bread crumbs
1/2 teaspoon salt
Poultry seasoning (I just used fresh sage)
Parsley
1 egg
Mash this up into meatball material, and refrigerate till later...
For the soup:
4 cups turkey stock (take the carcass from your turkey and boil the meat off. Remember, a soup is only as good as your stock! Add celery, onions, and cook it long and slow!!!)
2 carrots (What makes this special, is to julienne your carrots in perfect, one and one half inch sticks!)
2 stalks of celery, chopped
Simmer until vegetables are tender.
Bring it to a boil, and add a roux of
1/2 cup fat (I use butter)
1/3 cup flour
1 cup milk
Once the soup is thickened, keep it at a simmer without boiling. Form the meatballs into 1 inch balls, and add them to the soup. Cook until the meatball is cooked through.

I also like this Mexican Turkey dish:
2 cups of turkey, cut up
1 bag of Doritos (or cheapo corn chips)
2 cans of cream of chicken soup
3/4 soup can of milk
I can of green chilis, chopped.
2 cups of cheddar cheese.
I'm just making this up as I go, so be patient...
Crush up the chips,
Layer chips, turkey, chilis and cheese, and the milk/soup mix, twice.
End with cheese.
Cover and bake at oh.... 350 or so, until bubbly or cooked through. I'd say 30 to 45 minutes.
Serve with salsa and sour cream.

Left over turkey should be used as energy food on those cold wet winter days in search of the winter steelhead!! My favorite part of turkey day is the left overs. I make sandwiches, 2 slices of bread, chunked up turkey meat,a slice of dressing with just a touch of turkey gravey and maybe a sweet potatoe piece spread thinly over it salt and pepper!!!
Wow!! I am going fishing tomorrow just so I can have these sandwitches!!!

well..pickles might be nice, pie is all gone and ketchup might be a bit much!

Thanksgiving is just a time consuming step on the way to the best food of all, pumpkin pie for breakfast, and turkey melt (with swiss cheese, and maybe a bit of salsa) sandwiches for lunch. :smile:

Last year, it was turkey and dumpling soup. This year, I think it'll be turkey noodle soup. During the cold weather months, nothing is better than coming home from a cold day on the water and heating up some turkey soup to warm the bones.

The best part of Thanksgiving is the weekend after. Smoked turkey enchiladas and turkey bone gumbo at our house.
Here is the gumbo recipe. Try it. You won't be disapointed. :grin:
1 1/2 cups flour
1 1/2 cups oil
1 cup chopped onions
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 tablespoon chopped garlic
2 cups sliced andouille sausage
2 quarts stock
2 bay leaves
Salt and cayenne
Creole spice
2 cups shredded cooked turkey meat
Steamed rice, for serving
Chopped scallions, for garnish In a large soup pot slowly heat oil and flour together over low heat, stirring constantly, until it becomes a nutty brown color and is very fragrant; be careful not to burn. Add onions, pepper and celery and cook, stirring, 4 minutes. Add garlic and andouille and cook 5 minutes, until some fat releases from sausage. Add stock, bay leaf, 2 teaspoons salt, cayenne and Creole spice to taste. Bring to a boil, reduce heat and simmer for 1 hour. Add turkey and simmer 30 minutes more. Adjust seasonings and serve with hot steamed rice and a generous sprinkle of green onions.

Fastwater, thats my sandwich!!! Less the sprouts and sub cream cheese for cheddar. It ends up being about 3 inches tall so you have to do the squish to actually eat it.

I run a couple of 12lb turkeys through the smoker: salt and pepper inside and out, no brine, 12 hours hung in the Brinkley wet smoker, yum.
One of the birds goes to work and is reduced to bones in a matter of hours. The other I use for sandwiches:
2 slices french bread
mayo
layers of light and dark smoked turkey
layer of dressing
slices of cranberry sauce
Simple, but delicious! If you have not tried the smoked turkey bit you are missing out!

Nothing but Best Foods in my house. I don't care if the other stuff is on sale.. they could give it away. I want best foods.
What about cranberry sauce on your turkey sand. Does anyone really do that?

Cranberry on my sandwhich? You bet! I like the basic ketchup and mayo, but if you add a little bit of cream cheese and cranberry jelly it's over the top. :smile: My favorite sandwhich by far, any time of the year!

ahhh Best Foods,,, known as Helmans east of the rockys,,,,,,I love that stuff..and put it on most everything,,,,,
Shove the turkey pieces into a food processor,,,chop it so it looks dirt....add some BEST FOODS and mix it like you would with tuna..spead it on bread,, a little pepper,,some cranberry sauce... and enjoy..yeehaww...good stuff,,,,

Jennie, the dorito/turkey/cream of mushroom soup thing is what my mom called "Viva La Turkey" I think the recipe was actually chicken, but mom used turkey instead.
And instead of chips, she used strips of corn tortillas.
And oh! How I hated that stuff! :sick: (sorry mom!)

Here's one I created that we really enjoy. Lots of options to customize it too, so here is the basic...
Approx 4 cups cooked turkey
About a dozen corn tortillas
One large (32oz?) can green enchilada sauce
One small (16oz?) can green enchilada sauce
1 9 oz can diced green chilies
1 6 oz can sliced olives (I like more)
2 15 oz cans refried beans
3 cups shredded cheeses (pepper jack, jack, Colby, cheddar, or any combo you like)
Sour cream and hot sauce for garnish
Large glass baking dish (bigger than a 13x9)
Preheat oven to 350
Place enough enchilada sauce (from small can) in bottom of baking dish to coat the bottom, reserve remainder of enchilada sauce for the top of the casserole.
Place enough tortillas in bottom of dish to completely cover the sauce
Spread beans over tortillas
Sprinkle about half of the chilis and all of the olives over the beans
Add about half the cheese, spreading evenly
Skin, debone & shred chicken
mix with enchilada sauce (big can only)
spoon into baking dish in an even layer
Cover chicken/sauce layer completely with tortillas
Pour remainder of small can of sauce on top, completely coating the tortillas
Bake at 350 for 30 minutes
Sprinkle cheese and remaining chilis on top (you could also add more olives)
Bake another 30 minutes
Remove from oven
Let stand 10 minutes and serve with sour cream
If you like spicier dishes, look for the Medium enchilada sauce (My fav is Las Palmas)
Sub jalapenos for the green chilis
Add onions, corn or veggies for a nice variation.
Pork substitutes well for the chicken. If using beef (leftover pot roast works well), switch to a red sauce.
Cut leftovers into individual serving size, freeze, then vac seal for a great ready-made meal any time!
Tip: If your casserole is very full, place a large cookie sheet on the rack beneath it to catch any bubble-over J
