I have tried it before and it turned out like leather. I have had some that have been outstanding. anybody have a go to recipe?

I learned this recipe from a guy who used to own a fish retail shop in Nahcotta,WA.

Cook the Oysters in salty boiling water until they start to float.
Remove and cool with cold water.
Cover all sides heavy with brown suger and let set overnight.
Place Oysters in Little Chief Smoker and smoke until you reach the doneness you like. Seems like it was only a couple of hours but it has been a couple of years since I did them. Vacuum seal when they are warm and freeze or just grab a cold refreshment and go for it.

I've not tried smoking clams. Like them too much out of the frying pan.
