This is my lovely wife's crab cake recipe. IT IS THE BEST IN THE WORLD.
No, she didn't make me say that---the cakes are the best.
Here ya are---
C wrote this down this am for all you ifish crabbers---enjoy---
1/2 cup finely chopped celery
1/2 cup " " onion
Saute in 1Tbl butter
Cool
Combine in a bowl and mix well
celery and onion mix
1/2 cup dry bread crumbs
1 or 2 Tbl mayo
1 egg
1/4 to 1/3 cup parmesan or romano grated cheese
3 Tbl dry or fresh parsley
1/2 tsp hot sauce or more to taste
1/4 tsp salt
1/4 tsp black pepper
Gently fold the above mixture with 2 cups of crab meat. Fold gently so not to break up the crab pieces.
Shape into 6 to 8 patties
They can now be frozen or eaten fresh.
When ready to cook, coat with panco bread crumbs and fry until browned. Of course the patty is already cooked, so only need to cook until browned and warmed inside.
Damn--I'm really hungry now --gotta go.
