View Full Version : Need hamburger or 'cheap' beef recipes!

In my last trimester of my (hopefully) last pregnancy, and I've developed an aversion to any kind of meat except beef. Not a problem, but I only have a few recipes that call for hamburger or cheap cuts of beef, like stew meat or round steak.

Doesn't have to be fancy. We like ethnic stuff, as well as meat and potatoes. No food allergies or dietary restrictions to worry about. It just needs to be fairly easy to fix, and not too spicy, as the extra spicy stuff is giving me a bit of heartburn lately. Any recipes other than the usual spaghetti, enchiladas, stew, etc., would be much appreciated. :flowered:

This is one of my favs - fantastic in the smoker

1 15 oz can diced tomatoes - drained (almost any flavor)
1/2 cup ketchup
1 cup seasoned breadcrumbs
3/4 cup finely chopped onion
3/4 cup chopped fresh basil (plus a few whole leaves to garnish top)
1/2 cup (2 ounces) shredded sharp provolone cheese
2 large egg whites (or one whole egg)
2 garlic cloves, minced
1 pound ground round
Cooking spray
1/3 cup ketchup

Preheat oven to 350°.
Combine 1/2 cup ketchup, breadcrumbs, and the next 6 ingredients (breadcrumbs through beef) in a large bowl. Add tomatoes to meat mixture. Shape meat mixture into a 9 x 5-inch loaf on a broiler pan coated with cooking spray. Spread 1/3 cup ketchup over meat loaf. Bake at 350° for 1 hour or until a thermometer registers 160°. Let stand 10 minutes before slicing.

Or get creative. One of my childrens' favorite dishes was made with browned ground beef to which I added olives, onions, corn, chopped celery, a little spaghetti sauce, and probably a few other things that escape me at the moment - I mixed all that together and rolled out a frozen bread dough, added the mixture, topped with cheese, folded over, pinching the edges together and popped it in the oven til the crust was done. I guess you could call it a calzone. Anyway, just experiment and have fun.

Oh, and you can use round steak for stroganoff - just cook it low and slow in the sauce to make it tender.

Thanks for some ideas! I am a good recipe-follower, but usually not so good at being creative. I do like to 'tweak' recipes, though, and I'm thinking of all kinds of ways that I could do that calzone.

And, Boatdog, I've never tried to make any of those things, but I will now. Thanks. :)

Oh, Tom just reminded me - I have an excellent recipe for "unstuffed cabbage" - way quicker

· 1 head cabbage
· 1 to 1 1/2 pounds ground meat (beef, turkey, combos, whatever), depending on the servings you want
· 1/4 cup minced onion
· 1 Tbsp caraway seeds (optional, but highly recommended)
· 1 tsp ground coriander (optional, but if you have any around, put it in)
· 1 tsp garlic powder
· 1 can tomatoes (about 16 oz) (diced is nice, but whole is fine)
· 3 Tbsp lemon juice (can use vinegar, which is actually more traditional)
· sweetener
· salt, pepper
Preparation:
1) Cut the cabbage into chunks, about 3 inches on a side (you don't have to be exact). Separate into pieces, maybe 2 to 4 leaves thickness each. Put about half in the bottom of the roasting pan or crock pot.

2) Mix the meat, onion, and spices, including salt and pepper. Form into meatballs, and nestle them amongst the cabbage leaves. Put the rest of the leaves on top.

3) Put tomatoes and lemon juice or vinegar into blender (or into a pot and use a stick blender, or use a food processor). Pulse a few times. You want the tomatoes partially pureed, but still to have the chunks. You can fully puree half the can, if desired. You can do this in a pot on the stove and cook it down a bit if you want (it's probably best to do this in order to blend the flavors, but it's not crucial).

4) Add sweetener to the tomato mixture until you get a nice "sweet and sour" effect. Add a bit of salt and pepper, and another tablespoon of caraway seeds, if desired. Pour the mixture over the cabbage.

5) Bake in oven at 350 F for 1 hour. I like to cover it for the first 20 minutes to get the juices going, and then remove the cover. In a crock pot, cook for 6 to 8 hours on low or 2 to 3 on high.

Nutritional Analysis: Total calories and fat are going to depend upon meat chosen. For four servings made with 1 1/4 lb. meat, each serving has: 15 grams effective carbohydrate plus 9 grams of fiber and 30 grams of protein

this is a standard for us. quick and easy.

Almost Instant Shepards Pie

pre-heat oven to 400
put 1lb ground beef in 8x10 oven safe pan(I use a disposable tin pan, no cleanup)
brown in oven for 15 minutes, stir 1-2 times
remove from oven - drain any fat that renders out
add one jar/can of beef gravy
add 1lb bag of frozen mixed veggies or similar (do not mix, add as a separate layer)
top with 1 container pre-made mashed potatos (another layer)

bake foe 30 mins till bubbling, serve big spoonfuls of steaming goodness

We make a stir fry from round steak all the time.

broccoli
red bell pepper
green bell pepper
cauliflower
sweet onion
1 can of pineapple chunks (drained)
1-2 lb elk or deer round steak cut up into 1" x 1" cubes

Marinate the elk/deer cubes in Yoshida's Gourmet Teriyaki sauce for ~2 hours. Cook the cubes till they're ~3/4 way done...then add all your veggies, pineapple, and a little more teriyaki sauce. Cook everything together for ~10-15 minutes, and serve over rice!

Many, many variations. Easy to do and experiment with.

This is as cheap as it gets.. and it's good:

1lbs ground beef
1 bag frozen veggies
2 packages of beef flavored Top Ramen
1tbsp soy sauce

Brown the beef in a frying pan or wok. Then add half the bag of frozen veggies along with seasoning packets from the Ramen and fry until the veggies are cooked. Boil the ramen noodles for 1 minute then strain. It's very important to not over cook the noodles (they should not be like soup noodles). Add the strained noodles and soy sauce to the beef and veggies and pan fry together for a minute or so.

Cost should be around $3.50 - $4.00 and takes less than 10 minutes to prepare.

have you tried carne asada? the thin skirt steak like you get in the mexican resturants? thats cheap and easy, as far as burgers. mix up some with lipton onion dip mix, makes great burgers..
