View Full Version : Freezing Anahiem peppers?

I had a few extra Anahiem peppers from the garden, and tried freezing them. Didn't blanch, just cut them up, removed the seeds, and put them on a cookie sheet to freeze. Then I vacume packed, but when thawed out, they're pretty mushy. Still taste ok cooked, but lost that crispness. Anyone ever had any luck freezing them?
We do Poblano & Jalapenos whole stem on, right out of the garden, wash and toss them directly into a vac. bag, seal & freeze. They are as good as off the plant. Still working on some from last season.

Freezing ruptures the cell walls, it goes limp.

The way I do Anaheim's is to blister on the charcoal BBQ, then peel. I open one side and scrape the seeds out. Then I put them in a vacuum pack bag and freeze. Next day I seal the bag.
They are ready for fajitas or rellenos.
Poblanos get blistered, peeled, smoked and then canned. I haven't tried freezing them yet. They get used for bean dip and fajitas.
Hmmm. Now I'm hungry.
