I found myself with a lot, I mean a lot of Cucumbers this year. Through finding ways to use them up I decided to make some soup. I didnt want Cold soup though which is what most recipies I found were. I kind of took a little of this and that from some recipes, added my own zing and ended up with something great. Here is the base of it and you can spice to taste. This makes 3 to 4 quarts of soup so have some hungry people.
3 large slicing cucumbers (8"+ long) Chopped
3 large slicing cucumbers (8"+ long) blended in the blender
3 Medium Potatoes Chopped
2 Cups Milk
2 Cans Cream of Mushroom soup
3 Cups Chicken Broth
2 to 3 tablespoons Curry Powder (depends on how much you like)
3 tablespoons Basil
3 tablespoons Dried Parsley
Salt and Pepper to Taste
Mix all ingrediants in a pot and bring to a boil. Simmer till potatoes are cooked and eat.
