A recipe from my Mom--something to do with leftover crab, posted for Pilar:
Mix equal parts of crab and ground pork. Chopped shrimp can be substituted for the crab. Add 4 green onions chopped into 1/4" pieces (assuming 1 pound of pork and crab). Stir in 3 eggs, salt and pepper to taste. Roll in the square, 8" rice paper wrappers and tuck ends, just like you were making an eggroll. Fry in hot oil/deep fryer until light, crispy brown (about 15 minutes).
Wrap finished roll in leaf lettuce and dip in the following dipping sauce:
6 chopped green onoins
4 tbsp veg. oil
5 tbsp soy sauce
2 tbsp rice vinegar
1/2 tsp chili oil
1/2 tsp chili flakes.
Leftover rolls can be frozen and heated up later--best in an oven, but a microwave works in a pinch for a quick lunch. I generally keep a tupperware of the sauce in the fridge, too.
