Ok this is driving me crazy, we are working our way toward the bottom of a jar of home made chipotles packed in a sauce made from cane sugar vinegar, onions, garlic and some other spices. It was made by a Mexican neighbor who has since gone back to Mexico.

Our pepper plants are loaded and I was hoping to find a recipe / guidance to make a similar batch of Chipotles. Has anyone roasted peppers on their Treager or other smoker?

Any suggestions before I leap in with both feet?

Wear rubber gloves and eye protection. Habneros are not to be trifled with. They won't be as hot if you remove the seeds and white webs first. Roast them on high in your traeger until the skin blackens, then peel off the skin. The pepper should be tender and ready to eat or do them al-dente to pickle them; the soak will finish the job. My favorite are Poblano's - can you say smoked chile relleno baby?!
