My husband came home from work with 8 small, assorted peppers. I don't know what kinds they are, don't have any recipes that use them. I don't want to waste them, but I don't know how to use them. Any ideas?

Hot peppers? Great for salsa. Or you could freeze them. Lay them out on a metal pan and freeze. Then put them into freezer bags, and then rebag that. You could do something like 1-2 peppers a bag for single use.

Then they can be cut up for chili, burrito mix, etc.

Okay, thanks. I didn't know we could freeze them. We have little ones, so I have to keep our chilis and Mexican food fairly mild.

Can you use them in salsa after they've been frozen? Also, would you take the seeds out first?

Once frozen, they can be used just as though they weren't. Now, this is my 1st year doing this, so I'm learning. I'm going to be freezing enough jalapeno's to last me a year, so I hope it works well. I'm getting my info from a hot pepper web site.

It's your choice to remove the seeds. The highest concentration of "heat" is in the membrane.

how 'bout pickling the peppers? I've never pickled anything yet but the pickled peppers I've had were tasty and mild (I'm led to believe that pickling takes out some of the heat).
