i use the hi mountain cure pepper blend, its easy and pretty tasty

Sorry 3stix, if you wanted a jerky recipe for anything other than Antelope, I'd give it to ya. I'd never degrade an antelope by making it into "jerky". Besides, it makes better sausage;)

ive tried all the store bought brines and they suck my friend showed me how to make it like his grand pa showed him you get what ever spices/seasonings you want and your brown sugar then you get a deeper type pan you put some sugar acrost the bottom then you ad a layer of meat then your spices more sugar then another layer of meat until you use all your meat ad NO LIQUID (except like teryaki/soy sauce etc) place in fridge over night it will juice the meat and make your own liquid from the meat hplace it on your racks ad fresh pepper or what ever you like and smoke it up till done

this is the best i ever made and the only way ill make jerky

I think with jerky, the way you prep it is almost as important as your recipe.

For salmon, after the 6 hour brine I let it dry two to three hours then hit it with cool smoke (raise your rack out of you little/big chief to keep the smoke cool) then just let it dry outside for maybe up to a full day or until it is no longer soft. then its done! Yum.

Ohh and I also use the Dry Brine (cup wht sugar, cup brown sugar, half cup non iodized salt, half cup johny's, lots of pepper and other select spices)
