Can I install a Raymarine SmartPilot ST6000 on my boat with twin outboards and hydraulic steering?

Will this unit work?

Short answer: yes.

You'll need to tee into the hydraulic lines between your helm and cylinders. A problem you will run in to is the rudder rate sensor. It comes in either a rotary or liner model. The device connects to your rudder (in the case of outboards, a shaft that tracks port and stbd as the outboards turn port and stbd) and determines the rudder postion and rate of turn. In many outboard configurations, no such shaft exists, complicating the installation.

I would suggest a Smartpilot with the built-in rate gyro (G models), as the rate gyro is used to determine rate of turn -- you wouldn't need the rudder rate sensor.

You should give raymarine a call and talk with their tech support. I am sure they can provide some useful information for your particular setup.
