This is a great recipe for folks who don't particularly care for salmon/steelhead.

Steve's Super Sauce Salmon (S4)

Ingredients

3/4 cup Worcestershire Sauce
1/2 cup brown sugar
1 Tbs Black Pepper
1/2 cup Lemon Juice
One dandy salmon/steelhead filet.

Amounts are optional. This is just a good starting point, depending on preferred tastes.

Mix all ingredients in a coffee cup (or container of your choice) being certain to dissolve brown sugar.

- Pre-heat oven to 300deg F.
- Place salmon fillet on a well greased cookie sheet (I prefer to lay some foil on the pan first for easier clean-up).
- Coat entire filet with sauce. Once filet is coated, I like to take a fork and poke a cuzillion holes in the filet, pushing the sauce into the flesh, then spread another layer of sauce over fish.
- Cover fish with foil and bake for about 15 minutes.
- Remove and discard foil and baste again w/sauce.
- Continue baking fish (uncovered) until meat is flaky.

When serving, make sure you put the remaining S4 on the table for everyone to put over their meat once it's served. When done correctly, the sauce will create a glaze over the fish after you've removed the foil. I've prepared this stuff for a lot of people who "don't particularly" care for salmon. Everyone has loved it and it all gets eaten.

Yummy!! Orange Salmon!! The first time I had this was at my neighbors 80th
birthday party. I almost wet myself it was soooo good!! :grin: :grin: :grin: :grin: :grin:

Thanks for the recipies. I plan on trying them both. Here is one I really enjoy, good on salmon, but even better on tuna. Trader Joes sells a product called Tangerine Glaze and Marinande. I put the tuna in a zip lock bag for 4-6 hours with a bunch of this marinade. Grilling is best in my opinion, but all other methods are good as well. All that tangerine goop creates a crusty covering, oh mama!

Another one I like for salmon is a cracked pepper mustard ( fancy mustard )/olive oil mix spread on top and then baked. Eaten over fancy lettuce with more of the mustard/olive oil on the lettuce. Sounds different, but it is off the charts good.

Man, I'm going to have to go back out to the freezer and grab a filet.
