View Full Version : Springer stuffed peppers

Nice change of pace from plain old grilled salmon.
Stuffing:
1 cup fresh spinch
2 tbls gorgonzola crumbled
2 tbls romano grated
2 tbls butter
5 or 6 pieces of cooked bacon diced
Mix stuffing in a bowl and zap in the microwave for 30 sec. Spread onto pieces of skinned salmon fillet you can roll and fit into a pepper. Doesn't need to be pretty but you may have to butterfly the fillet so it will roll. 1 fillet off a 12lb salmon will do 5 or 6 big peppers. Salt and pepper to tast and put on the grill at 300 till the fish is 135 in the middle. Enjoy

That is a very good direction to take. Many possibilities. Will give it a try.

Those are some pretty powerful flavours to mix with the mildness of the salmon. Do you still find the flavour of the fish coming through ok?

I put Brie cheese instead of Gorg. I think you can do whatever you like. I also added some Johnnys and omitted the butter. I could still taste the springer very good. I think the possibilites are endless, but the bacon is a must, maybe i might try asparagus next time, jack cheese?

Terrific! I think the flavors went together nicely. I do like gorganzola cheese, you just can't overdo it.
Makes a piece of salmon go a long way.
