Disconnecting a Pump from a 350

I'm in the begining process of installing a new 350 long block in my jet boat. I need some basic information on disconnecting the old engine from the pump. Do you discommect the flex plate or the coupling that attaches to the pump? or what?

Pictures would help ... My X-Stream units "bell housing" is 3 pieces so you can take the top half off to access the universal joint and spline keeper bolt ...
