Another Smoker classic! Found this online today and will give it a go on the next nice weekend.

Atomic Chicken Delights
Chillis de-seeded

Stuffed with blue cheese.

Wrap a chicken fillet and beat it with a rolling pin to flatten it out.

Make a mixture from basil (fresh, finely chopped), olives and left over blue cheese. I chopped up the left over chillies (the tips) and added a bit of lemon zest to the mix.

Lay out the bacon and add your favorite seasoning.

Place the chicken fillet on top and paste with the mixture.

Pop the stuffed chilli on.

Roll the whole thing up and tie together. Add seasoning to outside.

Ready to go onto the smoker.

Smoke for 45-60min on 225. Finish on the grill until done.
(Or turn up the smoker to 350 to finish)

OK I tried these last night....

First off I could not find any bacon that looked like the picture so I had to improvise. I hammered the chicken breasts flat as a pancake and added a couple layers of prosciutto. I also added some chopped up mango to my inside layer mixture of olives, basil, blue cheese and EVOO.

Rolled up the stuffed red pepper (Red Jalapeno) and tied it up Chicken out.

Then my Traeger wouldn't ignite:noway: My fire rod must be out???

Ended up BBQ'ing these the old fashion way and they still came out great!:applause:

I added a Blue cheese and Gorgonzola sauce to the finished product that consisted of:


5oz Blue cheese crumbles
5oz Gorgonzola crumbles
1/4 cup EVOO
1/8 cup Red Wine
1 clove garlic crushedSimmer and drizzle over the chicken bomb..:food:

I will try it again when I get the Traeger back up and running.

Got four of the buggers finishing at 350 in the smoker right now - they look killer - can't wait. Having only had a hot dog at Home Depot I could eat a 2x4 right about now, but the smell coming from the smoker is excellent.

I tried the ABTs and wasn't really excited about them.

Will definately have to make up some of these!!! Am a huge fan of the ABT's so this looks like it will be a great addition. Both the ABT's and this new recipe at the same BBQ.........wow!! my mouth is watering just thinking about it!:meme:

I haven't had dinner :passout: That looks wonderful ! I do a variation of this but my filling is spinach...mushrooms...onions...chopped garlic, all cooled down then I mix in Feta cheese and fill the chicken breast. I don't think i'd get the pepper by the wife but i'm sure i'd enjoy it.
