Regular Pad Thai is pretty ok, but plain.

Try this ... seafood pad thai vegie delight!

Soak pad thai rice noodles as per package.

2 TBSP veg oil in the wok.
add 1/2 small sweet onion, diced
scramble in 2 eggs
add 2 TBSP veg oil
add 1 poblano pepper, diced
add 1 cup mushrooms, diced
add 1/2 pound raw, deveined, shelled shrimp
add 1 pound ocean scallops
add 2-3 cloves diced garlic

When shrimp and scallops are cooked, drain and add pad thai noodles
add 1/2 tsp Thai Fire Oil
add 1/4 cup Asian sweet hot chili sauce
simmer 5 minutes

Add Pad Thai sauce
add 1/2 cup chopped roasted, unsalted peanuts
add 1/2 cup diced scallions

simmer 1 minute

add 2 cups bean sprouts
Stir
Serve with Lime wedges and cilantro topping

What kinda Pad Thai sauce u like to use? I have found there is a WORLD of difference in taste between brands.......I got some that was supposed to be 'authentic' and it was more shrimp paste tasting, but I like the Taste of Thai brand (I think thats what it is) in a little short fat glass jar, but its like $5 for about 3 servings worth (the way I use it anyway).
Otherwise that rec. sounds good!

Sounds good, but, if you simmered a shrimp for 5 minutes, that sucker must be tough as leather???

Otherwise, sounds great!

They weren't tough at all! Key is fresh shrimp. The frozen stuff smells bad.
