OVEN-EASY BAKED RABBIT
2 to 3 lb. fryer rabbit
3/4 stick butter
1 1/2 cup finely rolled salted crackers (do them in a food processor)
salt to taste
Preheat oven to 350. Dip pieces of rabbit in melted butter and roll in cracker crumbs. Place pieces in shallow baking pan but do not crowd. Cover pan with lid or aluminum foil. Bake about 1 hour or until tender. Serves 4 to 6.

So that's what all the rabbits in my backyard are for. Thanks for the recipe. (sounds of .22 LR bullets sliding into tube magazine)

What stores sell rabbit in the OR-WA area? Safeway, QFC, Albertson's, Costco ???

You'll have to call around and see if they carry it. It's a regional thing. It's HUGE in the south, but it's hard to find sometimes around here.
I might have a few ready in mid-May. PM me.

My wife bought one at the St. Johns IGA Food Store in Vancouver. It wasn't too bad, but I sure couldn't eat it every day.

People eat squirrels all the time, wild, you shoot them, there is even a season for them, check your regs. They are fairly tasty, one of my sons likes them a lot.:wink:Ok, I'm really not that gullible, squirrel? Domestic or wild? tan or grey?
