Anybody got some good ways to fix veggies (any kind) that doesn't require cheese, heavy cream, cr. of mushroom soup, mayo or lots of butter?
We like almost any vegetable, raw or cooked. Spicy is fine. Just getting a little tired of broccoli and canned green beans.

This may sound gross but we like it. We sautee cabbage leaves in a little olive oil, salt and freshly grated nutmeg. Steamed asparagus... ...roasted veggies in a little olive oil... red peppers/onions/carrots/even parsnips and/or turnips/potatoes...cut in big chunks. Smash a garlic clove and add it to the olive oil (olive oil is not a bad thing) Then toss the veggies in it..put them in a pan, roast in fairly hot oven. I put the carrots/turnips/parsnips/potatoes in first..they take longer than the peppers.

Hey Melissa, lately my veggies best friends are sesame oil and fresh ginger... throw in a little garlic for variety. A little sesame oil goes a long way and adds tons of flavor. Just toss the veggies (I like snap peas, asparagus or green beans done this way) in the olive oil & grated ginger, then throw them in a fry pan and slam the lid on. Cook over med heat until tender-crisp. YUM.
Canned green beans? I'd be tired of that after the first bite -eeeewwwww!

WE have just recently been introduced to steamed veggies with a drizzle of "Lemon Olive Oil" over them. Yummmm!! And so good for you!

It all sounds good! Even the cabbage recipe. I bet it's not gross at all. For some reason I like cabbage and cauliflower with pork. Don't ask me why. We'll have to try it next time I make a pork roast or chops.
The sesame oil w/ ginger reminds me of eating at my cousin's. Some days I wish I lived at her house. Her husband is Vietnamese, so she has learned to cook all these awesome Vietnamese dishes. She is half Mexican, half Irish, so you just never know what you're going to get there!
I will check for lemon olive oil, too. I wonder if they have any other flavors besides lemon?

Besides lemon, garlic and ginger look for some truffle oil to use instead of Sesame Oil it is spendy, but adds great flavor. Another, is steam you veggies in chicken or beef stock instead of water. Fresh ground pepper is a nice addition to most veggies - and heck while your at it toss in some home canned tuna. Lemon Pepper on your veggies, then steam in the microwave - yum.

I canned the gr. beans myself. Still, though, I have a hard time eating them if they're not cooked with bacon and onions, or put in a soup or goulash.

Oh - I'm sure those are a whole lot better than the tin can varieties. Pickle those up with some hot peppers and garlic and dill - nothing like some spicy dill green beans - I love using those on sandwiches besides pickles

I've never tried pickling canned green beans, but I bet you could just add the ingredients cold and then place in fridge for several weeks. That might keep them from getting soggy(er).

I think you'd have to pickle the beans when fresh - but I don't know.

My aunt cans dilly beans. I think you have to do the pickling and canning at the same time, when the beans are fresh. I'm not crazy about the pickled dill flavor, but I like sweet pickles. I wonder if you could do something similar to beans. Hmmmm....
Got some fresh ginger last night. Our little corner store didn't have good sesame oil or lemon olive oil, so I'll get some today in the big city. :)
