Just made this tonight for dinner and it was so delcious I just had to share!

Cube and cook 1 potato in simmering water for 10 minutes. Set aside.

While potato is cooking, dice:
2 carrots
1 small onion
3 ribs celery

Saute diced carrots, onion, celery in 2 T unsalted butter for 5 minutes until the onions are translucent. Add 1 or 2 cloves minced garlic (can use garlic press). Cook 1 minute more.

In a different larger pot, melt 4 T unsalted butter and stir in 1/4 c. flour. Cook 5 minutes over medium high heat. Gradually whisk in 2 cans chicken broth. Add the vegetables and reserved diced potato into the flour/broth mixture.
Add:
1 can (14oz) drained artichoke hearts (not the marinated kind)
1 bay leaf
1/2 tsp cayenne pepper
1/4 tsp dried thyme
1/4 tsp dried sage
1/4 tsp oregano or marjoram
salt and pepper to taste

Simmer for 30 minutes over low heat.
Whisk in 1/2 cup half and half and 1/2 cup whipping cream.
Add 12 shucked oysters and their juice (canned is fine if good quality).
Simmer but do not boil or cream will separate.
Serve with garlic toast. Yum!!!

Just made it! I doubled the oysters, the wife and kids loved it too!
