Quick fry them in butter with a litltle bit of garlic and they will be wonderful. I used to frog in calif and get large ones but don't know of any populations in Oregon. I love frog legs.

mix one egg with 1 cup milk
roll legs in tempura flour (dry rice flour)
dip in egg milk mixture
roll in panko bread crumbs
fry in 1" of oil or if you have one, deep fry @ 375 degrees for 4-5 minutes
be sure to cut the tendon or they will "cramp up" on you...
love frog legs... we go gigging on my aunts farm on Sauvies Island... it's always a blast!

that is my go to recipe for ANYTHING that goes into hot oil... oysters, shrimp and ESPECIALLY scallops all turn out well... the secret is that the panko browns quite quickly so you don't end up overcooking your delicate seafoods!
Also makes KILLER chicken strips... add some cajun or asian spices to the tempura flour and you have something that will make people think you know what you're doing!

Just skin them first, and this recipe will come out great

I have caught them on a strip of rag, a big barbless fly and when I was a little kid, a nightcrawler. About anything that looks like a flying insect works. Just put it under his nose.

I take it that they will hang on and not let go

We always went for them after dark. Good boots or waders, gunny sack, and a good flashlight. Walk the shoreline slowly with the light until you spot one. Keep the light on it and it won't move. Just reach over, pick it up and put it in the sack. Simple and it works.
When cleaning.... a good sharp pair of large shears(kitchen type) are used to cut the legs off at the waist. Pull the skin off the connected pair of legs and they are ready to batter and drop in the hot oil. Yummm.
