I tried this yesterday and it is by far the best Duck I have ever had.
This was cooked with a Fresh Mallard but would be great with geese or other ducks too.
Two Duck breasts
1 Cup Red wine
1 Cup Yoshidas Sauce
2 sprigs of Fresh Rosemarry
1 tablespoon garlic
Marinate for 3+ hrs (the longer you marinate the more game taste is taken out)
Pan fry over medium high heat for 8-10 mins each side of the breast.
Thats is.. Simple yet delicious
Served with Mashed potatoes and a salad
The salad was--
Mixed greens
blue cheese
cranberries
oranges
pine nuts
balaslamic vinnagrette dressing
One of the best dinners I've had in a while.

Thats sounds really good but can I have a poll here from other ifsher. 8-10 minutes each side wouldn't that over cook the breast and make them taste more like liver?
I already ate all my ducks! I shot this year!

I stand corrected, thanks to Merrile I re-evaluated the cook time tonight and I ended up about 4 min each side for a mallard breast (3 mins for more rare), could even be a little less with a smaller duck. The 8 to 10 mins might have come from when I did this with the breast of a big western goose. Anyway thank you for bringing it to my attention.

I'm glad you liked it I couldn't believe it the first time I tried it. What a great way to cook it up. Make sure you post up your comments on the thread so others may try it too.

We were really aprehensive when we went looking for recipes here and read all the negatives about duck and goose!! We thought oh no! I wish I had thought to take pic. of dinner on plate etc...but it was devoured before I thought of that! I think it helped to soak twice in water and paper towel drained. We marinated it almost 6 hrs. too! Anyway thanks, it was delicious! Now we know we don't have to just make jerky! Ha!

Thats a a nice looking dish! will need to try it! I just made jerky out of all my ducks so far this year.
I used to jerky all my waterfowl until I had it this way. Defiantly worth a try.
