Anyone else crazy for authentic tacos? The best places I have found to buy the are from the "Roach Coaches" from construction sites or there is one parked in Newberg by Napps....which has excellent food BTW.

I mixed up a batch of chicken today with cilantro and onions....a couple of white corn tortillias little fresh cilantro and a squeez of lime over the top and I am good to go...

I was wondering if anyone has a good pork or beef recipe for my nex rainy Saturday.

Try this recipe for carnitas - it is awesome!

For a shortcut, take smoked pulled pork, arrange on cookie sheet, spray with pam, then sprinkle on some chile con limon seasoning (found in mexican food stores or at Winco in the produce section). Place under broiler until crispy. We like to do this with leftover smoked pulled pork which I often make without seasoning it at all so that it's more versatile for other recipes.

Good stuff. Now I'm hungry.

Skirt steak, flank steak, or flat iron steak works great for this, but I use duck, goose, or chicken and it is good as well.

1 beer
juice from 4 limes
3 T brown sugar
1 can (6oz) whole jalapenos with juice
1/2 cup soy sauce
3 cloves garlic, crushed
1 T ground cumin
1 T oregano
1 handful chopped cilantro (save the rest to use fresh on the tacos)

Marinate overnite, and grill the meat to the desired temp. Grill the peppers as well and serve on the side for more heat. Serve with tortillas, black beans, and home made salsa (pico de gallo).

use pork instead of chicken with the cilantro and onions with your corn tortillas and you have about as authentic as you can get....at least for the northern part of mexico

Easy, easy recipe


Costco sells really cheap pork roasts, boneless, sold in packs of three. One will feed 3 people in tacos. (one roast is about the size of two fists)

Take one roast and cut up in 2 inch cubes.
Add one can of beer
1/8 to 1/4 teaspoon of cumin (to your liking)
1 tsp salt
1/2 medium diced onion
2 cloves of garlic chopped

Cook for 45 minutes on medium heat, covered.
Let pan cool with lid off for 15 to 20 minutes then break meat up with 2 forks or your hands.

Heat some corn tortillas in hot oil.

Condiments can include:
shredded cheese
cilantro
sourcream and salsa

If your feeding more people add 2 potatoes diced small to meat, before cooking and it goes farther. :food::food::food:

We visited our daughter when she was in Mexico for a term and she introduced us to Tacos Al Pastor (shepherd style). They are filled with a marinated, spit grilled pork and served in a small tortilla. They shave the meat from a huge hunk on a vertical spit. Usually you top them with some onion, lime juice, and cilantro and because they're so small it takes about a half a dozen or so to make a meal. We've found a couple of Mexican eateries near us that make really good ones and at least some of the taco wagons have them. We've even bought the seasoned meat from a Hispanic grocery and made them at home, but they weren't quite as good.
