Any one have any tips on Fondue? We haven't done it for quite q while. Favorite recieps? Meats(beef, chicken, shrimp) in oil and breads and vegies in cheese are what I had planned. Chocolate with fruit and macrons for desert. Party coming up.

Make it easy on yourself and for the cheese use Reinlander Fondue cheese... It can be found in the cheese section, usually near the fresh pastas. It comes in a jar. I dare you not to eat a whole jar by yourself. MMMM!

We use to make an onion and curry sauce for dipping meat into. I have not thought about that in a long time.

Sauteed onions add curry and sour cream and serve warm, very good.

We did a cranberry sauce for chicken. An apricot honey sauce for whatever.

Need to have fondue.

Whatever cheeses you decide on, start by melting down with a bit of butter and white wine added to your pan first. When the butter and wine are warm and melted add your cheese. I like to make a mixture of cream, swiss and cottage cheese. I can't stess enough....melt slowly in a heavy bottomed pan and whisk-stir often making sure you are getting good stir coverage all the way to the bottom of the pan.

I take my melted mixture and while still hot run it through a moulix to make sure any cottage cheese lumps/curd are complety smooth.

A little cayenne helps add a bit of zip.
