We love leftover prime rib. Purposely make extra so we can have leftovers.
Does anyone have a favorite use for leftovers?
Here's ours:
Prime Rib Sandwiches
Hogie or "outdoor" rolls
Bleu cheese crumbles
onions & mushrooms
Margarine, butter or olive oil
Beaver Xtra Hot horseradish
Preheat broiler
Slice and trim cooked prime rib to about 1/4 inch slices
Slice or chop onions & mushrooms to desired size
Caramelize onions in a large fry pan with a small amount of oil, or whatever your fat of choice is
When onions are almost done, add mushrooms and cook until soft and browned and onions are fully caramelized. Push mixture to side of pan and place meat in to heat slightly.
While the onions are cooking, take your roll, slice open lengthwise and slather one side with horseradish (don't be shy, the spicyness cooks out when heated), pile the bleu cheese on the other.
Place under broiler until cheese is melty and horseradish has turned a slightly darker color. Do not allow to burn.
plop the meat and desired amount of onions/mushrooms onto the bread, close and eat! :food:
