Does anybody have a good recipe? I would like to take 2008 and perfect a pie for Steve and myself. I think we will havve trying and tasting, probably put on a few pounds :laugh:, but who cares :tongue:. If you have any other godd pie recipes please let me know it has been a few years since I made any and at that time I was in the beginning stages. Thank you- Janey

It's not pecan, but this pie is my husband's favorite. The only thing that requires baking is the pie shell.

Aunt Grayce's Peanut Butter Pie

1/4 c. sugar
1 envelope unflavored gelatin
1/2 tsp. salt
1 c. milk
2 egg yolks- beaten

Mix above ingredients together over med. heat until boiling. Add 1/2 c. PB. Stir until blended. Chill until thickened.

Beat 2 egg whites and 1/4 c. sugar until stiff. Fold into chilled PB mixture. Add 2 c. Cool Whip. Pour in baked pie shell and top w/ crumbs made as follows:

1/3 c. PB
2/3 c. powdered sugar

You've definitely hit on my weak point here. By far and away Pecan Pie is my favorite pie. I've tried a bunch of different recipes and have narrowed it down to two. One is a traditional Pecan pie and the other is a Chocolate Bourbon Pecan Pie. The traditional Pecan Pie is an adaptation of a few different recipes that I've made. The Chocolate Bourbon Pecan Pie is from Judy Rosenburg's "All Butter, Fresh Cream, Sugar Packed, No Holds Barred, Baking Book", which is by far and away the best dessert book I've seen. I bought it for my wife when we first got married but didn't realize that I would be the one making most of the desserts in the book! Enjoy!

Traditional Pecan Pie
1/2 stick of butter
1 cup dark brown sugar
1 cup white corn syrup
3 eggs
1/8 teaspoon salt
1 tablespoon flour
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 unbaked 9 inch pie shell
1 cup pecans (I usually add about 1/4 cup more depending on the size of the pecans)

Preheat oven to 350. Using an electric mixer, cream the butter and sugar together. Add the syrup and whip until light. In a separate bowl, whip the eggs and salt together until light and fluffy. Combine the eggs with the sugar mixture along with the flour, vanilla, and cinnamon. Mix well and pour into pie crust. Sprinkle pecans on top being careful to cover the entire surface of the filling with pecans. Bake in a 350 degree oven for 50 minutes. The center should be set when done. Don't under cook it as the center will stay liquid once it cools and there's no going back. Serve with whipped cream and an insulin chaser. :)

Chocolate Bourbon Pecan Pie - Get used to this recipe as anyone that eats it will ask you to make it again and again

1 uncooked 9 inch pie shell
4 ounces unsweetened chocolate (I like Bakers unsweetened chocolate the best)
1 cup sugar
1 cup dark corn syrup
4 tablespoons unsalted butter at room temperature
1/4 teaspoon salt
4 large eggs at room temperature
1/4 cup bourbon (I think Makers Mark it goes really well with this recipe and I usually have some in the house :))
1 teaspoon vanilla
1 1/2 cups pecan halves

1) Preheat oven to 350.
2) Melt chocolate in microwave or in a double boiler placed over simmering water and set aside.
3) Heat the sugar and corn syrup in a small sauce pan over low heat stirring occasionally, until the sugar is dissolved, about 5 minutes. Transfer the mixture to a medium sized bowl.
4) Stir in the butter and salt and allow the mixture to cool for 8-10 minutes, stirring occasionally.
5) Add the eggs and bourbon to the cooled sugar mixture while beating constantly with a whisk. It's really important that the mixture is cooled or the eggs will cook and really mess things up. And yes I found this out the hard way...twice.
6) Add the chocolate and vanilla and whisk vigorously until blended. Stir in the pecans. Pour the filling into the pie shell.
7)Bake the pie on the center oven rack until the top is risen, set and crisp to the touch, 55-60 minutes. The surface will be covered with little cracks that will settle.
8) Remove the pie from the oven and cool it completely on a rack.
9) Get out the riot gun, taser, cattle prod, lion tamers chair and whip, etc. to fend off the hungry hordes drawn to the pie.

The Pecan Pie Recipe from "The Joy of Cooking". This is the best that I have tasted.

Well, it looks as though I have a couple of recipes to try out. I will let you know what the outcomes are. Thank you and keep 'em comin' I have another 11 months to go.
