View Full Version : Mom and German friend "knodel" Yum! Winter delight!

Hi there! I've gotten several requests for this one:

knodel just means "dumplings' in german, so it's anything dumpling you wanna make! :)

Here is how to do it. I don't have a written recipe that's any good. Just my own handwriting on an index cards!

I don't follow it, much, anyhow.

Just buy two quarts of sauerkraut, one pound of German sausage or ground pork, or grind up a pork steak to equal 1 pound.

Mix the ground pork with one finely chopped onion, salt, pepper, and 1/2 cup uncooked rice. (I use a little more. My family likes the starch. That would be your "knodel" or dumplings...

Empty one jar of sauerKraut into the dutch oven. Make your meatballs and drop them on top. Try to keep them separate, and do not disturb them during cooking. Otherwise, it turns into a mess of bits of stuff, you know?

Then, pour the other quart of kraut on top.

Fill it up with water. Not too much! But, so that you can see it.

Put it in the oven at 325-350, or cook on the stove at a low simmer for 2-3 hours.

The most important part is to make a HUGE pot of mashed potatoes! YUM!

Then, at dinner, you put down the mashers with lots of butter on them, and then on the side, or slightly on top, the kraut and knodel. :)

ENJOY! I sure did! It's not something I like all the time, but I get cravings for it!

My kids LOVE it, now, but didn't when they were little. It's an acquired thing, I think!

Made this for dinner tonight, it was quick, easy and tasty (and cheap to boot!). The kids ate it up too!
