I'm looking for a good Custom Meat shop in Portland. Currently would like to have some salmon smoked.. and with hunting season around the corner - will be having jerky, sausage, pep sticks etc.. made.

Some very good jerky and sausages. Don't know if they smoke fish though.

Otto's does a great job on meat, but they rock salt their fish and it becomes to dry.

Curious. In the 20 some years I've taken fish to Otto's they've never salted it.

Well it’s not in Portland but the 1 I found to one of the best is frontier custom cutting in Carlton. Makes the best pepperoni by far I should I get about 80 lbs. of it made every year and it all comes in vacuum pack bags that you don’t have to pay a buck a bag for like most places

Without a doubt I would have to strongly reccomend Sportsmen's Meat Cutting Center in Carver. They do a fantastic job with all kinds of game and have a very quick turn-around time. I've gone to some of the other places in Portaland and had to wait 6 months for a couple of sausages. A few weeks ago I took in 35 lbs of salmon to be smoked and 40 lbs of duck/goose to be made into sausage. I had everything back and nicely vaccum packed within a week. Can't say enough good things about them. The meat is always delicious. They did 3 deer for us in one week last fall.
