Puzzling over what to throw together for dinner last night, I took inventory of fridge and cupboards. A pretty slim selection of veggies, and... hmmmm... leftover pulled pork (with no sauce added). Well, no bread and I'm tired of bbq pork (even though it is yummy). Checking the cupboards I noted pretty much nothing to augment this meal, then a lightbulb went on - Curry paste and coconut milk. Okay, let's try this!
So I made up the curry, added some sliced onion, carrots, celery, red bell peppers and zucchini. Then into the mix went some 'Traegered' pulled pork and just heated through.
SE (Asia, that is) meets NW! The smoky flavor of the pork was an interesting combo with the sweet/spicy of the curry. Served it over whole wheat pasta, but it probably would have been better over rice.
Simple, quick and satisfying.
