Are you looking for help in smoking the tuna or recipes to use for already-smoked tuna?

Smoked salmon and smoked tuna recipies are interchangeable. If you have a good smoked salmon recipie ,you like, it will work on tuna the same way. Tuna isn't as fat as salmon so might require a little more effort to watch it to keep it from being to dry.

Good Luck;

For smoking the tuna, I like to take a loin or a part of a loin, slice lenthwise into 2/3-inch thick pieces, pack the pieces in rock salt for 20 minutes (no more), rinse them, pat them dry, put a little coarse ground black pepper on both sides, let it air dry on a rack for about one hour, and then pop them in the smoker using alder chips. I can't tell you how long to smoke it, because it depends so much on things like the kind of smoker you are using, the outside temperature, and the wind. Just don't smoke them so long that they turn to jerky.

It is a simple recipe, but I like it a lot better than others that I have tried that are a lot more complicated. Enjoy.

Substitute the word Tuna for the word Salmon and you will have a tuna recipie. They are so close to the same that they are interchangeable.

Good Luck;
