View Full Version : Curing Salmon Eggs

We finally picked a few chinook hens (previous trips had produced all bucks)in Puget Sound area 11 last weekend. I want to get into steelheading this winter so needed to "field cure" the eggs. What I did was throw the fresh eggs into a zip-lock bag and mix in the powdered cure - then into the ice chest. Next day, add more eggs, add more powder - mix it up. Then put them in the freezer when I get home. Is this an O.K. way to process the eggs or should I be doing something different? I have always been a saltwater guy and all the 20+ years worth of salmon eggs I had previously extracted became gull food. images/icons/confused.gif

i'd throw the eggs in the ziplock bags and onto ice, no cure. when you get home, split the skeins and lay them out on paper sacks split open inside out (you don't want the ink on the bags soaking into the eggs) and let them dry out some. then use the recipe for the 'best eggs' on www.piscatorialpursuits.com. (http://www.piscatorialpursuits.com.) i've gotten one good set out of that recipe that held up forever. the second time i tried it i failed miserably. i probably wasn't being meticulous enough that time though.
