What you got?

I love FRESH liver. especially Blacktail, luckily we have two to cook up.

I am a simpleton, seasoned flour dredge, or Krusteaz Bake and Fry.

Top with sauteed onions, Voila':D

Anyhow, after soaking all day in several rounds of fresh salt water, it is skinned and veined. Dredged in flour. Onions with lots of garlic cooked in margarine so it doesn't burn and thick cut pepper bacon from Vogets, stir fry it all together and they really like it. Me it smells like a train wreck

Here's another recipe(sorta) that was made for a big group of guys by one of the 'old timers' in our group.

Sauteed up a huge pan of carmelized onions.
Dredged and browned sliced heart and liver pieces, not completely cooked, just browned.

In a huge deep baking dish, he layered the onions and sliced browned meat (alternating meat, onions, meat, onions..) until the pan was lightly heaping.

Then he added beer to about 3/4 full. topped with bacon slices side by side, covered with foil, and baked until bubbling and a magical gravy appeared.

I don't know what happened in that pan, but it was delicious!
