View Full Version : Venison Burger Help?

I need some help with burger meat. About how much fat (lbs.) for lbs of venison? I also wanted to try to make some breakfast sasuage, does any one have any good recipes?? This is no new invention, but take 3 lbs of peppered bacon and gring in 10 lbs of venison. Very tasty! Thanks for the help.

Personnally I don't add any fat or suet to my venison, it's teh way my parents raised us and I haven't found a reason to change... You will then be at the mercy of the quality of the additive. We use ours for cooking practacally anything but a hamburger. What waste of great meat. If I want a burger i'll go to the freezer and get beef.
Good luck with the sausage, I produce a damn good summer sausage, no fat added.

For venison burger I usually have 15% beef suet added to whatever venison burger I'm having made. I've found that to be the perfect amount, but other opinions may vary. I've used it for every deer I've ever had ground into burger and it just comes out great. It doesn't detract from the venison flavor either.
