I got mine today. A great load of fresh raw eggs with tight skeins and large berries. And Scott finally gave in and sold out his egg cure. images/icons/smile.gif Just the cure though, not the secret ingredients. You can get either of thoswe, or already cured up eggs, by calling his partner Ed or Kevin at 503-359-5204 or checking with Scott at 503-392-9468 (9450). If they get bought out on this shipment before you get there, well images/icons/tongue.gif ... images/icons/smile.gif jk ... They are getting periodic shipments in for the next few weeks. As for the cure ...aaah, it's OK I guess. images/icons/grin.gif (Geez, don't want others to have that killer cure too, dang it).

RT, I put up 25lbs of Amerman eggs in Scotts cure tonight that I bought from Scott and I have to say that maybe he's pulling our leg. My eggs looked awesome before curing but now 2 hours later they have turned to watery mush. What do you think I should do? RT, if you think that you can save them you can have them. images/icons/rolleyes.gif images/icons/grin.gif

Sure Grant. Just seal them in zip locks and mail them to me. I will try to make some use out of them. images/icons/shocked.gif images/icons/grin.gif You know this is Scott's first commercial venture with the famous Amerman egg cure, and I'm sure he just needs a little more time to develope a better one that won't juice up the eggs .... NOT!! Gonna be great! I'm up late still turning mine and they are just the right juice out. I have them at room temp the last few hours and I will turn them once more and fridgerate them before heading out the door to fish out of Illwaco this morning, and the juice will reabsorb just fine over the next 24 to 36 hours before sealing them in jars. Gonna be fun floatfishing and backbouncing these eggs! .... And fun with another day on the water with no sleep. images/icons/smile.gif Sunday on the ocean between #2 adn the CR too. Can you say "vacu seal" and "smoke another one" - fish that is.

I got mine yesterday in the mail and they are awesome. I bought the pre-cured eggs and the nooks are gonna tear em up!!!!!!!!

Actually, Scott had some finished product with him when I got my 25lbs and if mine turn out anything like his I should be able to catch a fish or two.

BTW Grant, I talked to Scott for ya and he said it was about 2 "tablespoons" of cure per egg skein - not 2 cups per skein ya cracker!!! No wonder you made Koolade slush out of your 25 lbs. images/icons/grin.gif images/icons/grin.gif ... jk

Edit: I didn't see your post in time before posting mine Grant. Mine are looooking gooood! Smell good too. They do juice up real well, and are reabsorbing just fine. The dye they use is non-costic so using a healthy amount of cure seems fine. I'm the same way as Kevin and Scott in that I just start sprinkling the cure on and can tell when it's about the right amount, after doing it for so many years. I used to measure - using about 1 1/2 T. cure per pound of eggs; which works good. Scott figures he uses about 1 lb. of cure per 8 lbs. of eggs and Kevin estimated he uses about 1 per 10. So I suggest using about 1 per 9 lbs. of eggs? It's not critical really - just be in that ballpark. This has got me pumped for tidewater 'nookin soon. images/icons/smile.gif

Oh boy, just picked up a few quarts of eggs at GI Joes. They have that perfect brown/glow color that fish crave. Also much easier to handle as I can just take a skein and lay it on the board and cut it in chunks much like the fruitcake grandma Hazel used to make. I can also feel good knowing that I only paid $19 bucks a quart for these beauts. I will be the envy of all who fish tomorrow... images/icons/shocked.gif

Yes Steve I am planning a month or two vacation starting the last week in september. I am going to hunt and fish as much as I can. I havent taken a vacation in several years and I think I deserve it images/icons/cool.gif images/icons/cool.gif Every once in a while behind a mudcat bite is a silver hogcat!!!! I figure better to buy all the raw eggs you need instead of keeping a marginal hen just because you might need the eggs. PLus the eggs from these guys are unbeatable in quality. Give me a ring , Id like to visit w/you~~~~~~~John

I buy those brown rotting eggs too, so when I run into someone I konw on the river that asks to borrow a few eggs I give them those GI specials images/icons/grin.gif . They never ask again, and I save the A-game clusters images/icons/wink.gif . ....

This is kind of a confession but I think a lesson for all. Last year while bobber fishing a couple of guys on the lower Siletz we hit a slow part of the day. Unproductive feeling water and the middle of the day when I felt like fishing was dead. Not wanting to waste my premo eggs, I snuck on some Guides choice that I had won in a Steelheaders raffle. We ended up hooking three fish on the brown crap. Confused the daylights out of me!

Do any of you ever add any NaCl to your eggs? They shur do juice and soak up nice and firm with a few tablespoons. I just had a wild hair and also tried some MgSo4-7H2O in another test batch, for you with sore bonz that is epsom salt.

Rt how has MSG performed for you in the cure and on the river? I think it doesn't go into solution well or precipitates out.

Hey BUGGLE', I decided to quit using that irratic NaCl images/icons/grin.gif ... not - what the he!! is NaCl? Niacinamide? ...

As for the MSG, it is not only good, I think it is as consistent as the all time standard sodium sulfite. The best I've found is 'Sun Luck' brand. Just don't use it heavy - try around 1 part per 10 parts cure if you pre-mix it in. Or sprinkle it lightly on cured eggs that don't have it already - just keep in mind that some commercial cures have it in already. ...

As for that MgSo4-7h2o, try that on salmon that have swam a long ways from the ocean - you know, sore muscles images/icons/grin.gif . The 4/7 ratio sounds a bit strong? Let us know how it works. ...

Also, try rolling some of your cured eggs around in raw bacon before heading for the river. You might just catch a huge hog - seriously. images/icons/shocked.gif

So cool you can catch a hog with cured hog. I am skeptical yet currious too.

Sorry to go collegiant chemistry on you but, they all are salts so NaCL is sodium cloride. You usually get it by saying, "please pass the salt" images/icons/smile.gif. Otherwise know as table salt. I use the chemical name to be quick and precise not to be a snob. This batch with NaCl is slow to obsorb the juice but boy are they are firm!!!

Use the non-iodine versions because the fish probably don't like iodine and it may interact poorly with other chems used in cures. They also use white sugar - which is a natural color preserver and many old timer fishermen swear 'nooks have a sweet tooth. I agree. ...

As for the bacon bit ... several years ago, famous test pilot Chuck Yeager got paired with Buzz Ramsey in the Herritage Foundation Tillamook fall chinook fishing fund raiser. It's been confirmed that Yeager wrapped a raw piece of bacon on the belly of a Kwikfish, while others used sardine filets, and hooked and landed the biggest 'nook in the event - yup, with bacon on it! There is fat, meat, and nitrate in bacon; and 'nooks like all 3.
