View Full Version : How long can I keep fish in my brine?

Just a question. I have a little bit of a problem that I have never ran into before, I have some salmon sitting in my brine that I had put together late friday night... It is still in the brine right now and will not be taken out until tommrow or late tonight......
I have never left a fish in my brine for over 24hrs in the past but I have run into a situation that will keep in in the fridge sitting in the brine for at least another 12hrs:passout:
Will the fish be ok or have I ruined it?

I've found the longer it sits in the brine the saltier it gets. I've never let mine brine for more than 16 hrs. Chinook is more forgiving since the filets are so much thicker.

:cheers:You can soak it in fresh water and it will remove some of the salt. It will not ruin it.

What am I thinking I have to get home first ... Nephew got his first deer have to go look at it and tell him what a great job he did. Then laugh at my sister when she tries to put it in the trunk of her Volvo to take it to the butcher tommrow. I know she is going to ask me to take it in my Explorer... Guess I'll be driving a Volvo for tommrow....lol

I just did a batch 3.5 days and it was delicious.. I dont use salt just Soy sauce,
