How do you keep salmon skin from sticking to your racks when smoking. I had a heck of a time prying it off last weekend. My racks arent new but not all rusted either. Would punching some holes in some aluminum foil that has that non stick side work??:confused: After all my prying they were tasty though.mmm

I spray my racks with olive oil and cut the skin off it works for me

leave the skin on and spray the racks... both sides. For some reason, if the bottom of the racks aren't sprayed, mine sticks too.

Spray the racks skin down and let the fish cool completely before removing. I find the bigger the filets you put on the rack the easier they are to remove.

i have used pam as well and have not had a problem good luck keep trying

I dry my fish using a fan for about an hour depending on humid/temp.
And turn them around once.
Then I smoke them.
Never had a problem. of them sticking.

I too think having a dry filet is key. I normally brine then rinse with fresh water, pat dry with a paper towel then place on racks to dry until a glaze forms over the meat (about an hour) then smoke. Never have an issue with sticking...

You got it all wrong.....

"Brown Paper" Grocery Bag

Cut pieces of brown paper the size of or slightly larger than your pieces of fish. Set fish skin side down on the brown paper and into your smoker. I still Pam my racks to easily clean the smoke stain off. Fish skin sticks to your brown paper. When done smoking let it all cool the peel the paper and skin right off your fish. Then I vacuum pack from there.

Makes for a clean job.

Dried my fish on paper towels. After pellicle develops I transfer to racks that I have sprayed with pam. Smoke, and dry. No problems with either removal or clean up.

Rinse the fish well to remove any sugar from the brine.

Let the fish dry for 30-45 minutes.

Spray the racks with Pam.

Nothin' to it.
